Healthy New Year Recipe

Happy New Year! We certainly hope you all are making moves to fulfilling those resolutions you promised you’d stick to this time around. A popular resolution that creates quite the buzz every year is achieving health and fitness goals, however, sometimes life gets in the way and these goals tend to fall through. Therefore, this week on our blog we want to help keep those old habits away by sharing a health conscious recipe made by Leslie Schilling using ingredients picked up at Ontario’s local Sprouts Farmers Market. For those always on the go, we know breakfast can be the hardest meal to squeeze in. If that’s your same struggle, give these delicious egg muffins a try and let us know how you like them!

Ingredients
1. 1 cup Ham and cubed Sprouts Old Tyme Butcher Shop Ham
2. 1 cup Spinach or Arugula
3. 8 lg brown, organic eggs
4. 1/3 cup milk
5. ½ tsp Baking Powder
6. 1 cup Shredded Cheese
7. Salt & Black Pepper

Instructions
1. Preheat your over to 350 degrees and generously grease a muffin pan with olive oil
2. Divide deli ham and fresh spinach or arugula among the twelve muffin slots
3. In a large bowl, mix together eggs, milk, baking powder, and salt and pepper to taste.
4. Pour evenly over meat and veggies to fill all the muffin slots. Top each with shredded cheese and pop in the oven for 18-20 minutes
5. Let cool for about 1 minute and remove from pan. Enjoy!
